How should I store the wine?
Fundamental requirements for the preservation of wine:

Stable temperature: Ideally, we would find a space with a stable temperature between 12 and 15 degrees. If not, we advise you to store them in a corner of the house with a stable temperature, it doesn’t matter that the temperature does not exactly reach 12-15 degrees, as long as it is stable. If there is anything that can harm the wine, it is sudden changes in temperature. That is why open spaces in the house, such as terraces and balconies, are not advisable.

Silent spaces: Wine loves silence. Yes, wine likes quiet spaces, without much noise, without vibrations. Avoid placing it near a loudspeaker, or any electrical appliance that can generate great vibrations.

Humidity and wine: If we want to be very scrupulous with the preservation of wine we will have to take care of the humidity of the place where we store it. Perfect humidity should be between 70 and 80%.

In the shade: Although it seems logical, remember that the wine should not receive direct sunlight. The sun rays on the bottle cause temperature rises in the wine, allow the cork to shrink and speed up oxidation processes, which are not positive factors if we want to preserve our wines well.

Aroma free space: The wine is full of aromas, many of them subtle, ethereal. In order for wine to show us the full range of aromas it contains, the best thing to do is to store it in spaces free of strong odors, because these smells can penetrate the bottle and spoil the ones that the wine has to offer us.

The wine at rest: It is better to leave the wines alone. It may seem strange but it’s best not to move them around the house too much. Not only because of environmental changes, but also because of horizontal/vertical position changes.

The bottle must remain lying down or leaning at all times so that the wine is always in contact with the cork. This way we avoid that an excess of oxygen can enter the interior.

Cork is undoubtedly the best material to seal a bottle, although it can undergo expansions or contractions due to sudden changes in temperature, hence the requirement of a stable temperature.

How to choose the wine I need
Many times it is a question to which we have no answer. Red, rosé or white wine from Solar de Estraunza? How can food interfere with wine and vice versa?

Appetizers

The ideal would be a glass of white wine.

Starters

Nowadays, it is common to start the meal with a salad. In this case, we should start with a light wine, white or rosé. If you choose a red wine, it should be maintained until the end of the meal. If the dish has marine flavors, white wine will be the choice.

Cheese

Wine doesn’t always fit perfectly with cheese. In this regard, it is essential to remember an important principle: the power of the place (in this case cheese) must be proportional to that of wine. A great wine is not compatible with a powerful fragrant cheese, as it does not let you discern the subtleties of the wine.

Dishes with very different cheeses should be avoided because it will overshadow the wine bottle. If you want to accompany the cheese with bread, the latter must be neutral, avoiding walnut or sweet breads, even if the touch of flavor is very light.

Obviously, everything said in this article is a guideline. Each dish, each wine, has its own characteristics and its moment. What really matters is knowing what you like and enjoying it.
